Senior 4 practical

Dear senior 4,

Following yesterday’s demonstration lesson, I am uploading the assignment title and the things you need for next practical.

So next practical is about the creaming method. You shall prepare either the Victoria sandwich cake OR the cupcakes using the creaming method (the method we did by hand not with the food mixer). You find the recipes on the handout which I have given you. Michela, since you were absent, here is the handout. The Creaming Method. I will give you the preparation sheet on the 4th April.

The assignment title is: Your friend is throwing a birthday party. Prepare, cook and serve a Victoria sandwich cake or some cupcakes for the party using the creaming method.  Also serve a nutritious drink.

Group 1 are: Alessia, Rachele, Alaa, Timea, Laura, Li. These students will cook on Friday 8th April.

Group 2 are: Michela, Enrico, Deborah, Sam, Celine, Danica. You will cook on Friday 22nd April. We can’t make it on the 15th because there will be the ceremony of the senior 5’s.

Things to get:

Apron

All ingredients for the sandwich cake or the cupcakes. Including the filling ingredients for the sandwich cake and any other ingredients needed for the decoration and presentation. Example yoghurt, strawberries or other fruit, sprinkles, icing sugar, whipping cream and food colouring.

Ingredients for the drink

Bun tin and cupcake cases (if you will make the cupcakes)

2 same sized cake tins and baking paper for each tin (if you will make the sandwich cake). Diametre of the cake tins should not be larger than 19-20cm. You can use foil tins too.

Knife to chop the fruit

Piping bag (if you will make whipped cream for the presentation)

Things for the presentation. You may get: table cloth, cupcake/cake stand, menu card, serving plate, balloons, serving glass for drink, flowers, candles, etc…

Dish cloth

Container to carry the cake or cupcakes with you

A bottle or container for any extra whipping cream.

Remember to do the preparation sheet cautiously as this will be the last one before the practical for the o’level. Make sure that for the reasons for choice, you do not focus only on the nutritional value, but you also need to make reference to the dish chosen and the assignment title, the time management, the cost of the  meal, the colour, flavour and texture, the presentation etc.

Senior 3 practical

Dear senior 3,

I am uploading the photos of the practical of group 1. Please may I remind those who shall be cooking next Wednesday to get the apron, all ingredients for the meal and the drink, the serving plate and other decoration items. Do give importance to the laying of the table please and make sure to try the recipe beforehand to be well prepared.

Apple Crumble Recipe

Good morning everyone,

someone asked me to upload the recipe of the apple crumble. So here it is:

Ingredients for the crumble:

200g plain flour

100g margarine

2 tablespoons sugar

you can also add 50g of rolled oats

For the apple mix:

2 apples

3 tablespoons brown sugar

you can also add some raisins and walnuts

Method:

Prepare the crumble by sieving the flour into a mixing bowl. Add the sugar. Rub in the margarine. Set aside.

Prepare the apple mix by peeling and dicing the apples into small pieces. Add the brown sugar, raisins and walnuts.

Grease a tin. Put the apple mix at the bottom. Pour on top the crumble. Bake in a pre-heated oven at 200C until the crumble is a nice golden brown colour.

Alternative Junior 5B

Next Monday, 14th March, we shall be doing homemade burgers. These are the things which you will need:

100g minced meat / minced chicken (get more if you want to make more than 1 burger)

1 small onion

1 egg

1 bun (bread to put the burger in it)

any other ingredients to put in the bun e.g. cheese, ketchup, lettuce, tomatoes …

Figolli Recipe

For those of you who are interested to try the figolli, here is a recipe:

For the dough:

  • 800g Self Raising Flour
  • 225g  Castor Sugar
  • 340g Butter
  • 3 Eggs
  • 1 Lemon Zest
  • 1tsp Vanilla powder
  • Pinch of Salt

For the filling:

  • 170g Pure or Substitute Ground Almonds (I use the substitute almonds because it’s cheaper, and the taste will be just great 🙂 )
  • 170g Castor Sugar
  • 100g Icing Sugar
  • 1/2 Lemon Zest
  • 1tsp Vanilla Powder
  • 1 Egg

Method:

  1. Prepare the dough. This is the same procedure as the shortcrust pastry,  but instead of binding the dough with water, we bind it with an egg to make the pastry richer and tastier. So sieve the flour, add the sugar and the margarine. Rub-in until it looks like breadcrumbs. add the zest, vanilla and salt. In another bowl crack the eggs and whisk. Start adding them slowly to the dough until it is soft. If the dough is still dry, you can bind it with some freshly squeezed lemon juice. Put in a plastic bag and in the fridge to rest.
  2. Prepare the filling by mixing all the ingredients together until a soft paste is achieved. if the mixture is not spreadable enough, try adding a little water. Don’t make it too runny however.
  3. Get the dough. Cut in half and roll out on a floured surface. Use a figolla cutter (or be creative and cut it in any shape e.g. a heart shape). Put the filling and cover with the second rolled out pastry.
  4. Bake in a pre-heated oven at 170C for about 25 – 30 minutes or until golden brown.
  5. Once the figolla is baked and cooled down, you can cover with melted chocolate, some sprinkles, small easter eggs etc…
  6. Enjoy

P.s: Don’t eat a lot of Easter eggs and figolli 😉
