Senior 3 Coconut Balls Recipe

Here is the recipe for the coconut balls.


2 packets plain biscuits such as morning coffee

3 tablespoons cocoa powder

1 small can condensed milk

1 teaspoon vanilla

1 packet coconuts


  1. crush the biscuits and put in a mixing bowl.
  2. add the cocoa powder, vanilla, condensed milk and some coconuts (optional).
  3. roll the mixture into small balls. Put in coconuts.
  4. refrigerate.

Senior 3 Pancake recipe

Dear Senior 3,

today Mina asked me for the pancakes recipe. Here it is:

100g plain flour

2 eggs

300ml milk

1 tbsp oil

pinch salt


  1. sieve the flour.
  2. crack the eggs in a separate bowl. Gradually add to the flour and mix.
  3. Slowly add the milk and mix. Add oil and salt.
  4. Heat a frying pan. Spray with a non-stick spray.
  5. using a ladle, pour some mixture to cover the base of the pan. If you like thin pancakes don’t put a lot of batter.
  6. flip the pancake to cook from both sides.
  7. Before adding another ladle of batter, re-spray the non-stick spray.

Senior 3 cupcake recipe

Dear senior 3,

since you have asked me about the cupcake recipe, here it is. Super easy to make and you can add any of your favourite ingredients e.g. 1 teaspoon of cinnamon, some dried fruit, or any other flavour. To make them coloured, you need to add about 1 teaspoon of food colouring.


100g self-raising flour

100g margarine

100g sugar

some vanilla

2 eggs

  1. preheat oven to 180C
  2. sieve the flour in a bowl and set aside.
  3. mix the margarine and the sugar together with a wooden spoon or else with a food mixer. the mixture should become really creamy and a pale yellow colour.
  4. beat the eggs and add slowly to the butter and sugar mixture.
  5. slowly add the flour
  6. add vanilla or any other ingredient.
  7. pour the mixture into a bun tin. bake at 180C for about 10 minutes. To check if ready, insert a skewer (or a toothpick if you don’t have a skewer at home). It should come out clean.

Senior 4 Christmas Balls recipe

Dear Senior 4,

for the Christmas balls / coconut balls you need:

2 packets plain biscuits e.g. morning coffee biscuits.

1 small can sweetened condensed milk (halib maghqud)

2 tablespoons cocoa powder

1 teaspoon vanilla essence

1 packet coconuts

With this recipe we will make around 20 balls so if as a class you get 4 packets morning coffee, 2 small cans condensed milk, 2 packets coconuts, 1 bottle vanilla essence and 1 can cocoa powder, we’ll have more than enough. Try to decide who is going to get what because if you are going to work in pairs and each pair gets the above ingredients, we’ll have too many coconut balls. Try to decide and give me an answer on Monday or Tuesday.

Senior 1 breakfast practical

Dear senior 1,

Our next practical will be held on tuesdat 15th December because next Tuesday is a public holiday. May I remind you that you can prepare up to 3 food items suitable for breakfast (yoghurt cups, scrambled eggs on toast, health pancakes with a yoghurt and fruit filling …) and  a healthy drink (e.g. orange juice, milkshake, smoothie).

These are the things that you need to get for the practical:

Apron and cap

All ingredients that you require for the breakfast and the drink (you can get for the two of you so that you can eat the breakfast in class once the practical is over).

Any serving plate / cups that you may need.

Decoration items to lay the table (e.g. table cloth, table mat, menu card … be creative)

Dish cloth to dry the dishes
